What a great weekend! Well, for food at least. For football, not so much. I cooked, I baked, I ate, I watched football, and then I ate a little more. And that was just Saturday.
While running in the below-zero windchill Friday afternoon, I distracted myself by thinking warm thoughts. I kept repeating “must…make…chili” rather than dwelling on “can’t…feel…my…legs.” I was too busy on Friday night to make chili, but I figured it would be the perfect thing to eat while watching the Colts game the next day. So, after a delicious lunch at Yum on Saturday, I picked up a few ingredients and headed home to spend the afternoon in the kitchen.
Matt actually did most of the work while I stood around eating an oatmeal sandwich cookie. He’s the best.

While the chili slowly simmered, I made a loaf of Jalapeno Cheese Bread – so good.
I made a few substitutions for the bread: whole wheat instead of semolina flour, cheddar + Monterey jack instead of Longhorn cheese, and two jalapenos instead of five. I also sprinkled extra cheese on top before baking to form a layer of crispy cheese, which was a smart move.

I had a few several bites of a chocolate cupcake from Yum for dessert.

I could cross these off of my 31 in 2011 list, but because I’m not totally satisfied with the results I’m going to make at least one more batch before counting them.
After this weekend, I’m due for a run.

Nice. I’ve been stretching out the enjoyment for as long as possible and keeping my fingers crossed that they have them today when I go with my mom.
