I finally did it! I made oatmeal cream pies. One more thing knocked off the 31 in 2011 list.
I used a recipe from Honey & Jam that I bookmarked months ago, and they turned out great.
I followed the recipe exactly, but I might tweak it a bit next time.
Not over baking the cookies is the key to making them soft and chewy, so pay attention to the time more than the looks. Also important: giving half of them away so you don’t eat them all yourself.



I love oatmeal cream pies. They are a road trip treat. I will definitely have to try to make these!

what a funny coincidence that you made these today and I opened up my new Bon Appetit and they had a picture of the same cookie sold a Locanda Verde in NYC, but yours look even yummier than theirs.
