Weekend Eats – 2/21/11

Hope you all had a great weekend!

My weekend was snowy and full of good food.  Pretty standard.

I’ve been addicted to Jim Lahey’s pizza dough for the last year or so and haven’t really considered trying other recipes until I made the Pizza Bites from Annie’s Eats for the Super Bowl.  The dough for the Pizza Bites was incredibly easy to work with, and I knew that I had to try it again for some actual pizzas. While I’m still partial to our usual thin crust pizzas, a little variety is always nice.  The baked pizzas might have looked just like DiGiorno, but they (not surprisingly) tasted a thousand times better.

Pizza #1: pesto, artichoke hearts, kalamata olives, roasted tomatoes, goat cheese, and feta

Pizza #2: ham, pineapple, and mozzarella, with banana peppers added after baking

Saturday’s activities included a delicious brunch at Citizen Cafe, a trip to Borders, cleaning, and a late night viewing of Cedar Rapids (which was really good, especially if you’re a Steve Brule fan and you sneak in your own Junior Mints).

Judging by the line of people with stacks of books snaking halfway to the back of the store, I’m not the only one who’s disappointed that the nearest Borders is closing.  Can I assume that everyone in that line only buys books when they’re using the 33% off coupons that Borders send out almost every day?  Because that’s what I do, and I’d imagine that selling most of your inventory at a discount isn’t the best way to avoid bankruptcy.  I went to law school and not business school, though, so what do I know?  Well, I know that standing in line for 30 minutes is not worth the 20% discount for a commemorative Packers magazine and new cookbooks when you’ve had a few too many cups of coffee at brunch.

After a week of really warm weather, we returned to the reality of living in Minnesota.

On Thursday I ran in capris and a long-sleeve shirt.  Yesterday I ran in a snowstorm.

The highlight of my run: getting passed by the snowplow.  Or getting home without falling.  Or running when there were only a few inches of powder instead of the dozen or so that are on the ground this morning.  Or discovering that running with my eyes closed for short stretches is possible when faced with blinding snow.

When Mother Nature gives you a snow storm, make tortas and ice cream.

Torta fillings: Avocado, lettuce, cilantro, tomato, chihuahua cheese, sour cream, salsa, and hot sauce.

The main filling was a very un-photogenic pinto bean and chorizo mixture.  Matt also added a couple of slices of this really photogenic ham.  Is your mouth watering yet?

Messy, but good.  A little tweaking is required before I share all the details.

I’ve been craving mint chip ice cream for a while, and getting snowed in was just the excuse I needed to make a batch.

I used David Lebovitz’s recipe, and it was excellent.  The ice cream actually tastes like mint, unlike most of the versions I’ve had before.
