Where are all the Girl Scout cookies?? It’s mid-March, and I have yet to see a single Girl Scout selling boxes of Thin Mints and Samoas. I hope that changes soon, but in the meantime I’ll be eating my homemade Thin Mints.

I ran out of chocolate coating with about 1/3 of the cookies left, so I’d recommend making about 1 1/2 the recipe. I guess you could also be more careful about making the coating thin, but that’s no fun.
Yum. These were slightly different from the original, but they’re an excellent stand-in until I can find the real thing.





Oh my word, Kirsten. Even though I have Thin Mints at home (perhaps the Chicago Girl Scouts are more on top of their cookie sales?), I want to make these right now.
Girl Scouts just receive a bunch of boxes and have to sell a fixed quantity now: I had to buy mine in early February! There might still be some who have a few boxes left, but I think the days of pre-ordering are gone.
