Beets + Berries

Yesterday I ate bacon and eggs for breakfast and buffalo wings for lunch.  Today I went to the doctor and enthusiastically agreed to get my cholesterol checked.  My fancy new doctor’s office emails your test results to you within hours of your visit, and by lunchtime I had learned that I was one point over the normal cholesterol range.  One point!  I can blame that on the wings and the bacon, right?

To make up for yesterday’s transgressions, I made this salad for lunch: wheat berries, roasted beets, blue cheese, and toasted walnuts.  You should try it even if your cholesterol is totally average.  It’s good.  Also good?  My good cholesterol and that big bowl of fruit that I ate for dinner last night, even if it didn’t cancel out the wings.
